Cappadocia's evenings belong underground. This one is spent in a cave restaurant carved into the tuff, where a professional dance company works through the regional repertoire — the sword-and-shield of Bursa, the linked-arm halay of the east, the spoons of Silifke — accompanied by a live band on saz, davul and clarinet.
Between sets there is belly dancing, a mock Turkish wedding that pulls willing guests onto the floor, and a three-course dinner: mezes and salads, rice, a main of fish, chicken, lamb or a vegetarian plate, then dessert and fruit. Drinks are unlimited throughout — soft drinks, beer, Turkish wine and raki. We collect you from your hotel and drive you back at the end.
